Tuna Nicoise Recipe

This lovely entrée salad originated in Nice, France, a beautiful resort on the Cote d`Azur (French Riviera). The classic version uses only fresh, raw vegetables, but numerous variations have been developed that incorporate cooked produce. This delightful version sticks close to the original, with only the addition of boiled potatoes and green beans. Top it with Lemon Mustard Vinaigrette for the perfect tangy enhancement.

Ingredients:

2 5-oz 3/4 –inch thick tuna fillets
½ teaspoon dried tarragon
¼ teaspoon salt

8 romaine lettuce leaves
2 small plum tomatoes, quartered
2 hard-boiled eggs, quartered
8 black olives
2 teaspoons capers

Nua Pad Long (Beef with soy sauce)

400 g (13 1/2 oz) lean beef
More recipes with beef and pork
4 tbs sweet soy sauce
2 tbs corn starch
2 tbs oil
2 ts balsimico vinegar
3 tbls sherry
2 tsp brown sugar or white sugar salt
4 tbs oil
2 ts sesame oil

Takes 25 Minutes

Cut meat into thin slices.
Mix it with soy sauce and some oil. Add cornstarch and knead the meat with the soy sauce and oil mixture.
Mix soy sauce with balsamico vinegar, sherry, sugar and salt.
Heat 4 tbls of oil in a Wok or large pan. Add meat and stirfry some minutes.
Add soy sauce mixture and let cook until smooth.

TIPP: Serve with rice or salad.

1 cup Bisquick
2 cup Carnation Powder
2 cup Water
1 1/2 cup Sugar
4 pods Cardamom Seeds
4 tbsp Butter
6-8 drops Rose Water
1/8 cup Yogurt
1/2 cup Milk
Oil

Preparation

* Heat butter and pour in a bowl. Add bisquick, carnation powder and yogurt and blend together. Knead well adding milk if necessary.
* Make a smooth ball, cover and let rest for around 30 minutes. Make 12-14 small balls.
* Heat the water, add sugar, bring to boil, add cardamom seeds and simmer.
* Boil, then simmer to reduce the water by half. Heat the oil until hot and fry the balls to a golden brown or until they are darkbrown, almost black.
* Soak in sugar syrup for a few hours until they double in size
* Serve hot or cold.

2 cup Whole milk
4 oz. Crushed almonds and pistachios
14 oz. Sweetened Condensed Milk
4-5 drops Rose Water

Preparation

* Boil half and half and milk together until thickened for about 30 minutes.
* Then add condensed milk and cook until thickened on low heat (about 3 1/2 hours), stirring occasionally.
* Add rose water, almonds and pistachios.
* Cool and then pour in the popsicle molds. Freeze until set.
